He was an unused substitute during Spain’s 1–1 draw with Cameroon on June 13, 2008. At 19 years old, Canales made his under-21 debut in 2009 and scored twice in his first two matches. Canales was included in the squad for the 2009 European Under-19 Championship, where he played all six games and helped Spain to the final, scoring one goal en route to a 3–1 victory over England. Sergio Canales made his debut for Racing Santander in 2006, when he was just 16 years old. Deportivo de La Coruña acquired 50% of his playing rights as part of a deal that saw Pedro Munitis return to Racing. On September 18, 2008, Canales debuted for the first team, coming on as a substitute in a UEFA Cup home game against FC Honka of Finland. The game ended in a 1-0 win for Santander. Two weeks later, on October 9, Canales made his debut for Real Madrid in a 3-1 win against CA Osasuna. Canales played well in the 2008-09 season, making 32 appearances and scoring five goals. However, he suffered a serious knee injury in April 2009 that sidelined him for nearly a year.
After returning from injury, Canales struggled to regain his form and was eventually sold to Valencia CF in 2014. Sergio Canales had a breakout season at Racing Santander in the 2008-09 season, scoring six goals and four assists to help his team narrowly avoid relegation. Canales was named Player of the Match in two separate matches against RCD Espanyol on December 6, 2009, and Sevilla FC on January 9, 2010. Canales continued his good form into the next season, scoring twice in a 1-1 draw at home to Real Valladolid. However, just over a month later, on November 28, Canales was diagnosed with a torn knee ligament after having to be stretchered off during a league home contest with Athletic Bilbao. While the injury sidelined him for the remainder of the season, it didn’t prevent Valencia from exercising their option to buy Canales from Real Madrid at the end of his loan period.
On April 26, 2012, in just his fifth appearance since returning from injury in the Europa League semifinals’ second leg against Atlético Madrid, Canales re-injured it early into the second half of a 0–1 home defeat (2–5 aggregate loss), missing the remainder of the season and six more months of action. On July 19, 2012, Valencia announced that they had signed Canales permanently for €7.5 million-plus five additional years.

Sergio Canales joined Real Sociedad in January 2014 for four and a half years at €3.5 million. Canales scored four goals from 36 appearances in his first complete season as the Txuriurdin finished in 12th position. However, on December 30, 2015, during the first half of an away game at Real Madrid, he suffered another serious knee injury in the left leg. On May 24, 2018, Real Sociedad confirmed that Canales would be leaving the Anoeta Stadium on June 30. During his time at the club, Sergio Canales has been a vital player for Real Sociedad, scoring important goals and helping the team to a 12th place finish in his first season.
